Soy-Glazed Chicken

This is the perfect dish to go with your fried rice or to eat alone if you can, its the perfect blend of Salt/Sour/Sweet in a yummy mouthwatering chicken dish, in one word it is Delicious, This is a must try and its really really simple and your whole family can join it in the making. ;) 

Ingredients

Chicken (i used 6-7 pieces, you can tweak the recipe if your making more or less)
Vegetable oil (for frying)
3 cloves garlic peeled and crushed
1 inch piece ginger peeled and chopped or grated
1/2 cup soy sauce (125 ml)
2 tsp Vanilla Extract or Essence 
2 tbsp honey
1 tbsp soft brown sugar
5-6 tablespoons Chilli Ketchup (or Hot chilli sauce)

Optional - Chopped Parsley to garnish

(Tbsp -  table spoon)     (tsp - tea spoon)

Frying

Heat a large Wok, and when its hot add the oil and let it heat, add the chicken and stir-fry  for 5 mins or until golden Brown

After that carefully take the chicken into a small plate and pat dry, take the oil into a different container as its served its purpose now.and thoroughly wipe the wok (with tissue or something you can dispose) so as there is no oil remaining.

Getting Started (adding the Ingredients)

Now add the Garlic, Ginger, Honey, Vanilla Essence, Sugar and Chilli Ketchup, mix a bit, then Add the soy sauce, then place over heat and bring to boil.

Adding the Chicken

Once it starts boiling, reduce the heat, it should be gently simmering. add the chicken pieces and bathe it with the mixture. cover and let it simmer for a few minutes until the sauce thickens and reduces. spoon the sauce over the chicken and stir occasionally when simmering.  you may add a little water if the sauce tends to thicken too much.

Garnishing and Serving

After the desired consistency is achieved you may garnish it with parsley (i didn't) and serve immediately with any dish of your choice. and better get first serving before everyone else devours all of it.
