Gluten Free Lemon Brownie (Blondie) Slice


Ingredients
- 250g butter
- 2 cups of caster sugar
- 4 eggs
- 1 1/2 cups gluten-free plain flour
- 1tspn. Xanthan gum
- 1 cup of coconut
- 3 tsp lemon rind
- 1/4 cup lemon juice
- Pure icing sugar for dusting.
Melt Butter and Allow to Cool Slightly




Preheat oven to 170c fan forced and line a slice tin with baking paper.
Stir in Caster Sugar Until Well Combined


Add Eggs One at a Time



Fold in Sifted Flour, Xanthan Gum, Coconut




Grate Lemon Rind and Add the Juice




When Well Combined Pour Into the Prepared Tin and Smooth Top.


Bake for Approx. 30 Min at 170c/338f



Once Skewer Comes Out Clean, Allow to Cool in the Tin



Cut Into Bars and Dust With Icing Sugar Just Before Serving.



Enjoy With a Cup of Tea
